That's a really cool idea! I definitely could use any reason I can give the player to come back to previous dungeons
One idea I had was somewhat similar: each dungeon after the first would have a secret path that leads to an optional boss that would actually be an enhanced refight of the previous dungeon's boss (a la the Carock refight in HoverBat's game), and that re-fight would gate a special item, ability, heart pickup, or something
