Even if it's not totally dead, being mostly dead can slow things down very much!
I've been doing a bunch of online digging and wondering what the differences are between the microbes used for different stuff-- I used ginger for my latest 2nd ferment of water kefir but like does that make it ginger beer? But I guess ginger beer has its own starter. Would that get alcoholic too if left to run long enough?
The there's tempeh, and kombucha, and kimchi etc-- but apparently you're supposed to keep things far away from each other if you're trying more than one at once.
And if nutritional yeast is the same species as baking yeast does that mean a person could make high protein bread if it was prepared a certain way? Can't find ANY info on that at all.
And how long does it take the critters to eat down the sugar content? I so wish I knew somebody with a lab to test nutritional content...
