Current process:
1. Source thick cut prime+ ribeyes
2. Take out of fridge and apply kosher salt and pepper 1 hr prior to cooking
3. Preheat oven to 450 15 min prior to cooking
3. Heat tallow in cast iron skillet on high heat for 5 minutes
4. 2 minutes on first side, moving slightly in pan after 30 seconds to avoid sticking
5. Flip and 2 minutes on reverse side, moving slightly after 30 seconds
6. Take off flame and put straight into oven for 3 minutes (adjust this time slightly depending on thickness)
7. Flip and finish with same amount of time
8. Rest under foil for at least 10 minutes
