It does seem short-sighted that TriMet doesn't have little shops at more of the stations.

Beaverton Transit Center has a kiosk, but I've never seen it open. There's a coffee kiosk at Rose Center. I think I have seen it operating occasionally. Maybe this market can't support that type of thing? There used to be something at Sunset Transit Center? There's nothing there now, IIRC.
