Sounds fun! I really appreciate you writing back. I personally think the green you used looked brilliant, maybe use the radicchio raw as garnish? Kumquats are in season and are delicious raw or pickled. Also excellent with duck. I love crispy salsify, have you used burdock before? Happy cooking.
