I prefer to buy joints as complete as possible to keep my options open. In this case I've taken out the spine/ribs and they have gone into the stock bone bag in the freezer.
The skin has been taken off and the excess fat trimmed off to be rendered into lard, and the skin chopped and salted for making chicharon.
The bulk of the meat has been rubbed with a salt/sugar/spices mix — this will be converted to a wet brine tomorrow & injected to speed the brining.
