Has been a while since I've had time for a proper low'n'slow. Kat asked for carnitas, so that's the best excuse there is! Popped down the local farm-butcher for a shoulder of his pork and amusingly he said he already has a few cut like "this" as some chef had been on the TV doing pork shoulder this way. The cut is a "Boston butt" I believe and usually I buy the whole shoulder and break it down into the butt and the ham... but this is convenient.
