My stalks all get dug out by the roots and either run through the shredder for compost, or donated to the local history center for use as decorations for their harvest festival. None of the corn is left in the ground. Also, I don't plant the corn in the same place every year, to minimize pests. Taking them before they dry out they'll rot down fast. If you let them dry standing, they will be harder to compost, but a pile of them in an out-of-the-way spot would be good habitat.😀
