Apple is very restrictive, and it's tricky to test iOS apps. Buying Mac servers is an expensive solution. They also like to reject updates to the app store for silly reasons.
It's wasted effort to develop UI for web, iOS, and Android, but it can't be changed, because Apple and Google will never agree on a standard. Great for jobs though. If web is enough, that's the fastest way to deliver UI, and it's as close to cross platform as it gets, but it can't use GPS, or gallery upload (or it's much easier in Flutter).
iOS is 60+% of potential customers, so I don't get how you can ignore that. I hate dealing with Apple, but it's necessary.
