Cat5e and above supports gigabit.
Cat5e has a thinner jacket and no central core, and smaller conductors than cat6a.
Cat6a is better for longer distance runs because of the physical robustness.

Shielded CAT6a/cat7 is for use in heavy EMI environments, like aircraft, broadcasting stations, or data centers.
This gets more sensitive with higher signaling rates.

You can get away with 5e with interior use just fine, but you may possibly run into issues with 10g without shielding.
