Up until the fermentation, the brewday is the same for ales and lagers. Lager yeasts like cool temperatures between 10 and 15°C. I'm going with John Palmer's advice "pitch cold, ferment warm" and use the Ferminator to get the wort down to its pitching temperature of 10°C. Right now it is at 16°C. I hope, it reaches 10°C before I fall asleep 😅
Oh and of course I am going to do an open fermentation. Köstritzer can be a little harsh, I hope this helps making my schwarzbier smoother.
