I do a 60 minute boil and add 40g of Hallertauer Tradition at the beginning of the boil and 40g after 50 minutes for some flavor. This should give me a noticeable but smooth bitterness and some floral and earthy flavors that should complement the slight schwarzbrotyness pretty well.
