I pick the passage I think will work best for the audience and the time slot.
Ideal: Something the audience hasn't heard before. (I have a couple of shorter works that haven't been published widely)
Good: A particularly nice passage, sometimes in book 1.
Avoid: Openings.
I also make sure that passage is on my phone so I can read from the screen without screwing around with networks or paper.
