I find coconut aminos are a bit sweet for me in most contexts, too. I have some wonderful misos from South River Miso, some of which are soy-free, and I'm thinking I might use up the coconut aminos bottle in the fridge by mixing them together in a sweet miso glaze, for things like nasu dengaku (grilled eggplant with miso glaze).
