I just dug last week's fruit farm newsletter out of the trash, it looks like galas should be available. I like fujis but they're either not ready yet or are one of the varieties that got totally wrecked by a hailstorm. Apparently the winesaps, which I normally use to make applesauce every year, got pretty well destroyed by hail.
One site I looked at did say cooking low and slow can prevent explosions. Or I could just give in and make a normal apple crisp. It just lacks the novelty of baking the whole apple.
