* pilau rice (similar: paella)
* daal (or dal, or dhal)

Both are so flexible, extensible, and great for batch cooking. You can have a different one every day once you've got a base recipe/technique nailed down. Given daal can be made from so many different legumes there are whole books on the subject. Our quickest red lentil daal is made from red split lentils and cooks in no time, with plenty of ginger, garlic, and tumeric.

An obvious extension on pilau rice is of course paella - but basically you can add all sorts of things to absorption cooked rice to make it a full meal.

Many recipes for both of these will be easy to find.
