That's awesome and a big thing is having someone along for the ride. A key for me was getting in the kitchen and getting used to doing the cooking for myself. Simplifying everything. You don't really need to worry about organs, just fatty meats. It depends largely on asking yourself: if you felt so good before when trying it then what made you stop? Find treats you like, such as dairy, double cream, butter, cheese. Does not matter. As long as you aim for as much fat as you can. Look after protein minimum requirements first, then up the fats. I aim for over 60% and ideally 80% of calories from fat. That is the key. Fat.
