I would go with "however long you're not looking at the server for". meaning, if I'm afk for a few days, then I want a few days of backups so that I know that I can restore to a good known state.
but, for mastodon, I wouldn't worry about keeping backups for more than 3-4 days. i think most users would be super upset if you rolled their posts back.
