i would still much prefer induction in my home kitchen for the following reasons: it's safer, it's easier to control, it's faster, it's **way** easier to clean, it's cheaper, and it doesn't wreck indoor air quality.
probably a wood fire is **the** tastiest way to cook, but it has so many downsides, i'm not going to light a fire in my kitchen. gotta balance priorities.
but, yeah. i have to say, i understand why chefs in professional kitchens won't switch to induction, it's noticeably different.
