our new place has a gas stove instead of induction, and it is with great regret that i inform you that it cooks better than induction.
it's weird. and i noticed this when we first got induction in our DC house: the heat on induction cooktops is **different**. it's hard to define. it's somehow, like, superficial heat?? it's a shallow heat.
the gas cooktop gets more flavor. the browning action is completely different. it's hard to put a finger on, but it's definitely better.
