My favourite method: Press for a few hours, cut into small cubes, marinade two-three hours in : tamari sauce+toasted sesame oil+pureed roasted garlic(+if you want spicy add red pepper paste and ginger), place on a parchment covered baking sheet in a oven preheated 400F/205C until golden brown and slightly crispy.
