I think the big difference is with Nix or Guix, you can easily roll back the state of the operating system. If your on Whateverian v2.23, you're going to get package updates rolling continually for v2.23. If something breaks and you're like "What changed," you might try rolling back some packages and looking through your update logs.

With Nix or Guix, you have a hash for the entire package tree. Every package released at x moment is part of a given hash. You can literally roll back to a previous commit and you can be in the exact package state from last Tuesday.

In theory, you could do something similar with nearly ever package manager that uses version control, with a little bit of retrofitting.
