Нет причин. Как раз потому, что японцы, может быть, и рады уйти от воронки (из-за плюсов батч-брю, которые я перечислил), но не смогут — из-за предпочтений в обжарке, да и рынок не позволит. Отцы не поймут. Вендинг с подогретыми банками им сошёл за батч-брю.
А корейцы без легаси начинали, по заветам SCA, интернетов этих. Им воронка в HoReCa нахрен не упала так то по уму если. То, что вкусно, — это понятно, но вкусно — это меньшинство. Для большинства и батч-брю вкусно (это если совсем в хрючево не уходить типа молочки, Старбаксов). И Грузия тебе это подтвердит, и Россия, и Европа. Батч-брю для общепита — это прям топ. Навалил, налил. Но не в Корее.
Потому что там все кофейные гурманы такие? Или потому что списывали у японцев? Как и k-pop’ом (все эти юридические аспекты жизни айдолов), и с автопромом, и чаболями, да и со всем остальным. Они старательно демонстрируют, как не любят японцев, — каждый год выходит блокбастер, где фоном проходит антияпонская история, — но именно обезьянство у них в крови. Оно в принципе норма для Азии. Но иной раз, как с этими воронками, просто не понимаешь нафига.
Как потребитель я конечно за воронку, не потому что вкусно (воронку легко можно плохо заварить, так что любой батч-брю будет вкусней), а потому что хочу чтоб за мои деньги сотрудники шевелились. Но с другой стороны медали, я вообще не понимаю нахрена воронки в HoReCa если ты не в Японии. Объективных причин просто нет. Так, чисто, понты. Но корейцы вроде не казахи 🤣
Я думаю, до батч-брю в HoReCa они всё-таки дотункают и воронки эти свои повсеместные повыбрасывают на место допов, как у нас в Кофемании. Ну или сразу к каким-нибудь экстрактам перейдут. Химфарм у них развит.

Потому что никто так не повернут на воронках в HoReCa, как японцы — из-за тёмной обжарки и осмотического метода они не могут иначе. Батч-брю им сразу в унитаз можно выливать, ну или холодным пить. А Корея — это типичная американская/европейская третья волна, ничего у них уникального, кроме разве что изредка обжарки чуть темней, не найдёшь (да и то, поди, для японских туристов). Всё модно, современно, как везде. Вот только если в этом самом «везде» (в контексте общепита куда ходит больше двух землекопов) воронка — это изврат за ваши деньги, то в Корее это by default, а изврат — это уже батч-брю. Но у них нет причин для этого. Они не производят воронки с 70-го года, они не вдохновлялись нацистами с их Мелиттой Ивановной, они не жарят темно, и осмотический метод им вообще не упал. У них должен быть батч-брю первей первого, но нет — они тупо, как и пол-Азии, сидят на воронках, сами не понимая почему. Натурально, карго-культ. Вот японцы так делали и мы будем, а то что смысла нет и сложно/дорого, так робота построить завсегда можно.

Без разницы, какой размер бизнеса — батч-брю просто лучше для общепита. Не надо обучать персонал, легче подгонять вкус, повторяемость тупо сто процентов. У воронки надо обучать персонал, повторяемость достигается только в воронках без байпаса (а они по вкусу все хуже V60), одно плохое зернышко руинит чашку.
Корейским кофейням (за границами этих мини-комнат, где один энтузиаст заваривает для кофейных задротов) с нормальным оборотом в принципе нет причин идти за воронкой, а делают они так просто из-за подражания японцам потеряв по пути мысль почему японцы в воронках, а не в батч-брю.
К нам корейских роботов привозили, которые V60 заваривают. 🤣 И это было решение для HoReCa. Что-то водит там, льёт.

У японцев переняли — это их характерная черта, только если у японцев к этому есть подводка из-за того, что они зерно жарят в уголь, то у корейцев это уже больше на обезьянство похоже. Для бизнеса батч-брю на голову выше, да и для посетителей зачастую вкуснее.
Но тут у меня свой пунктик. 🤭 Бобриста и так ничего не делает, кроме как стоит, а тут и кофе из термоса. Давайте мне ещё в банке алюминиевой продайте. My NextDNS subscription has ended. This year, I decided not to renew it simply because the developers clearly aren’t investing in the project or improving it. Instead, I installed HaGeZi Pro and HaGeZi TIF blocklists on my old MikroTik. With the money I saved from not renewing the subscription, I bought a Xiaomi AX3000T router. Unfortunately, I don’t know which memory manufacturer is in this unit (there are three possible ones), and one of them is known to cause issues. So I’m waiting for a patch in the stable OpenWRT branch before flashing it to use DoH and a local blocklist like I have on my MikroTik. For now, I’ve set up a free DNS from Controld with HaGeZi Pro blocklist: https://controld.com/free-dns
I also set Controld’s DNS on my smartphones, except for the ones using Proton’s DNS. Overall, the results are worse than what I had with NextDNS, but at least it’s free. Besides, I had been meaning to buy a new router for a while anyway.

Over time, I can say that La Rubia is now my favorite yerba, second only to the La Merced line. It’s delicious both hot and as tereré. I haven’t tried Russian-style tereré yet though 😂 Orange juice has vanished from Russian shelves — now it’s all “nectars”, meaning juice with pulp.
As for La Rubia, what I like is that they don’t have a whole product line. Just one kind. No Tradicional, Especial Selección, Premium... Argentinians love that kind of thing. I suspect it’s for the same reasons you can’t find pure orange juice in Russia anymore.

I just saw a guy get stuck in an elevator between floors, and he totally lost it.
