This just in: You don't need eggs to make good potato pancakes. Last night, I just left out the eggs and mixed some grated potato with a little minced onion, salt & pepper & fried 'em up. Delicious with cinnamon apple sauce. #latkes #vegan #potatopancakes #recipes
