Since you have julienne skills, you can thinly slice kombu/kelp (previously cooked/boiled/used to make dashi; stashed in freezer), simmer 2 mins in a bit of soy and sugar, cook blot, mix with salt - all of this to simulate shiokombu (or salted kombu - usually as shreds).

Also you can take a couple of ume - pickled plums, and make a quick paste.
