I do color ebooks on my Samsung Tablet. It's not an E-Reader per se, but it gets pretty good battery life (for a tablet) and it's got a decent sized screen for reading EBooks. (I wanted something to read TTRPG PDFs on, so bad PDF support or bad color were deal breakers for me).
I hope you get some reviews for the Remarkable 2. But if you find yourself pondering conventional tablets for ebooks, the Galaxy Tab A7 works pretty well.
