i got some mozzarella to put on top of my eggs and spice it with ginger, curcumin and a fancy "hemp" piri-piri which is very hot... and i was eating them with olives and i thought, wait, this is like a pizza

so today i'm cooking it like a pizza... fry nicely underneath, don't flip it, but after it's starting to slightly brown underneath, turn down the heat and cover the pan so it cooks through (because i seem to have an allergy to a protein in the yolk, cooking it denatures it and stops the allergy)

if it's cooked the right way underneath and maybe packed denser on the pan, the base of it can be basically one piece like a pizza base, except it's egg, and everything else is like a pizza

well, except for the grilling/baking part

seems to me that would be a nice way to make it though

sorta like an omlette but in layers like a pizza
