When I was on keto, I was duped into consuming large amounts of so-called superfoods that are high in oxalic acid, and my gut wasn't happy.

Foods like almonds, spinach, cacao, chia seeds, tumeric, etc.

Oxalic acid binds to minerals either during cooking or in the digestive tract to form oxalates.

Oxalate crystals can irritate the digestive tract and cause kidney stones and a myriad of other health issues.

Whizzing these "superfoods" up into a smoothie meant not only was I ingesting a huge amount of oxalic acid, but the oxalic acid was more accessible due to the fibre being broken up!
