My favorite high end meals are almost always at one Michelin star restaurants. The more recent the star award - the better.
A one star spot is likely striving for a second and third star. But can only charge you like they have one.
Also - Like music - what food is popular in high end restaurants has trends over time. New restaurants tend to have more acidic and sour notes and more precise cooking methods (which is why the food is never super hot) Both of which I happen to love.
A recent star probably means a newer style of cooking and a team hungry to do better.
Compare this to a restaurant that has had two stars for 25 years. The food will be good - but might feel stayed - like seeing a great band that came to fame in 1999.
