We don't have a preserving pan and made the jam in a stockpot. Might keep an eye out for a preserving pan that will work with induction hob... I'd prefer to use one, they are bigger and a better shape. Sloping sides = more surface area for evaporation, and Dad's old one had a nice indented lip so you could pour the jam out of it easily straight into the jars.
