This cookbook, which I found in a box on the street, has turned out to be one of my absolute favorites.
Mugaritz was one of the earliest “molecular gastronomy” restaurants in Spain.
And love it or hate it - this book describes in detail the thought process behind every dish , as well as precise instructions to recreate each one - with AND without fancy kitchen gear. Truly open sourcing decades of creativity and experimentation that led to what is held as some of the best food in the world. And funnily enough, for me it was free, so I can call it a FOS cookbook.
