Lots of wood bedding in and around their coop. The carbon in the wood balances out the nitrogen in their poop to make good compost, and if the pile is deep enough it'll generate heat through out the winter as the little microbes get to work.
As long as the chickens are protected from the elements by a roof and walls, that's pretty much all you need.
