Thanks. My concept of a beefsteak is a tomato where, when you cut a slice of it, you've got more flesh than seed cavity and gel. Idk if that's what everyone thinks of, but yeah I suppose they tend to be good as 'slicers' for sandwiches just b/c you don't get your bread soggy.
That said, I haven't grown anything bred as an 'earlygrow', so I couldn't say if there's a tendency for them to have larger seed cavities w/ more gel. Often when you're poking around a seed company will have at least one image of the variety cut open, so I'd just look at that, and hope their images are accurate. "Grow it out" is always the best arbiter tho.
