Miso Aubergine (air fried then halved, topped and grilled) on roasted sesame oiled udon noodles with an Asian style slaw on the side.

(topping: sweet miso, soy, honey, ginger, lime; slaw: red cabbage, carrot, scallions with soy, rice vinegar, ginger, sesame oil, coriander leaf dressing)
