I finally got my hands on a Kuri squash. I roasted it in an air fryer and peeled the skin off after roasting. It tasted like butternut squash but with a coarser texture and it was slightly less sweet. It was pretty big, so it will provide a lot of side dishes. And if you run across white acorn squash, buy them. When roasted, they are sweet (for squash). #cooking #squash #photography
