They cause inflammation. Typical history I heard was about rapeseed oil (now referred to as Canola). Was literally poisonous to humans and caused serious maladies. Then they found a way to filter most of the toxin out and sold the public that it was good for their heart (with industry funded studies as I understand it). At least that’s the short version, and I’m sure someone can correct or expand on this and other seed oils.
