Apple Notes lacks word count. Solution in two taps/clicks: Hit "Share" then hit "Open in Pages."
If you've already enabled word count in Pages, then your Note will auto-open in Pages, showing word count. Works the same on Mac and iPad. (Caveat: it creates a Pages file you may or may not want.)
