Baguettes for bruschetta later tonight. Recipe from Hamelman’s Bread, pate fermente yeasted dough (66%). I just used the overall formula w/o overnighting the pate fermente as I needed it for tonight. Also made six smaller loaves rather than his four. #bread #baking #food
