Hey. So yes, trails form as a result of temperature and humidity conditions at high altitude. The ground temperature is completely irrelevant to the formation of ice crystals closer to the stratosphere. I spend a lot of time up there so feel free to ask me. I've seen it all to be honest. Sometimes airplanes leave big contrails, sometimes nothing at all. And up at 38,000/40,000 ft where airliners cruise it's always cold, from -20 to -70 °C roughly. The hot air coming out of thee engine transforms straight into ice crystals or not.
