I've done jerky but also a lot of different fruit. I buy the bags of smaller apples and just slice them on the mandolin, toss in some water and citric acid to prevent browning, and dehydate. Knock out the seeds when dry and they're crisp and delicious too! I store in mason jars with a desiccant packet and they last a long time. You can use lemon juice but I have a ton of food grade citric acid I'm using up.
