I get where they’re going with this. (I think?) But I would absolutely try t-rex if were available and a chef put it on the menu.
I might not order it again. I didn’t, for instance, care for puffin when I tried it—I can be a one-and-done guy. But my culinary FOMO is way too intense to leave unusual food untasted if it’s right in front of me.
