Stainless is a rubbish conductor but the thick layer of aluminium in the middle makes them pretty good. The stainless gives them strength and doesn't leak aluminium into the food.
My father eventually scrubbed the Teflon layer of all the cheap Teflon coated pans my mother had, I dread to think where it went - I only hope it's safer in shreds than thermally degraded...
