I smoked a couple of picanhas earlier this week. Have to get back in the routine of smoking again. Picked up a shoulder roast because it was on sale, going to smoke it on Monday. I was going to brine it in a corned beef brine, but it turned into more of a jerk brine. Figured three days in brine should tenderize for smoking.
