My dad’s chicken wing recipe
-Season the wings with salt,smoked paprika, cayenne, onion powder and garlic powder (or your favorite bbq rub) and let chill in fridge overnight.
-Empty a bottle of Maul’s with onion bits bbq sauce (or your favorite bbq sauce) into a pot, leaving just a bit of the bbq sauce in the bottle. Add a splash of water to the sauce left in the bottle and shake. Dump this watery sauce mixture over the wings that have been in fridge overnight.
-In the pot with your bbq sauce, add dried onion flakes, liquid smoke and El Yucatán hot sauce (or your favorite hot sauce) and simmer on low heat while you grill the wings.
-Take your wings that have been basted in the watery bbq sauce and grill them (both sides) at a super high temperature. You want them to look almost burnt, which the watery sauce helps achieve.(see pic 1). Don’t worry about cooking them through, just pay attention to how charred they get.
-Remove from grill, cut them, add to a crockpot. Dump your bbq sauce that has been simmering into crockpot and mix it all up(pic 2). Cook on low for 2 hours and they’re good to go(pic 3)!
