Feeling like spreading some kindness? Here’s a delicious sourdough bread recipe to share with your neighbors! ☺️
Ingredients:
Bread flour 250g
Dark rye flour 100g
Starter 70g
Salt 7g
Water 280ml
Instructions:
Step 1: Prepare the Sourdough Starter
1. Feed your sourdough starter with a ratio of 1 part starter: 1 part flour: 1 part water.
2. Let it rise until it reaches its peak activity (about 3 hours for mine).
Step 2: Make the Dough
1. Combine all the ingredients in a bowl. No need to knead—just mix until you form a shaggy dough.
2. Cover and let the dough rest for 45 minutes.
3. Perform a series of stretch-and-folds:
• Stretch and fold the dough once, then cover and rest for 45 minutes.
• Repeat this process 4 times in total.
4. Transfer the dough to a straight-sided container and let it proof until it almost doubles in size.
Step 3: Shape the Dough
1. Pre-shape the dough and let it rest on the counter for 20–30 minutes to relax the gluten.
2. Perform the final shaping and place the dough seam-side up into a well-dusted banneton or proofing basket.
3. Cover and refrigerate for about12 hours (cold retard).
Step 4: Bake the Bread
1. Preheat the oven to 220°C (with the fan on).
2. Once the oven is hot, remove the dough from the fridge.
3. Turn the dough out seam-side down onto parchment paper and score the top.
4. Place the dough in the oven and spray some water to create steam (if you don’t have a Dutch oven).
5. Bake for 20 minutes at 220°C.
6. Lower the temperature to 180°C and bake for another 20 minutes, or until the crust is golden brown.
7. Let the bread cool for at least 30 minutes before slicing.
