Fallow deer sirloin with mushroom chocolate sauce:
-In a tall pot add 30cl of stock from
-Add mixed chopped mushrooms (even a bag of mixed frozen mushrooms works just fine).
-Cook at medium heat until it starts boiling, then reduce the heat.
-Add 1 1/2- 2 tablespoons of cocoa powder.
-Reduce until thickens.
-To cook the sirloin, let it sit outside the fridge until ot reaches room temperature, add salt and pepper to your liking at least 10'-15' before cooking. Cook on a pan to your liking (anything past rare is trash though). Serve with the sauce on the side

-Chop in big chunks 2 medium sized potatoes, 1 big carrot, 1 leek, 2 spring onions, 1 zucchini, 1 small piece of ginger, and 3 cloves of garlic. Place on the pressure cooker, add the elk bog
-Add 2 bay leaves broken in half, 1 cinnamon stick broken in half, 1 sundry sweet pepper without the seeds, some cloves, salt and pepper.

-Fill up with water until everything is covered, add 1/2 can of Coke or similar cola drink and some olive oil. Alternatively, add 1 glass of red wine instead of Coke.

-Cook for 70' at medium heat.
-Reserve the meat. Drain the vegetables and reserve the stock.
- In a pot, add the other 1/2 can of Coke, a table spoon of honey and 1/2 can of the stock. Reduce the mix at high heat until it thickens. Meanwhile, preheat the oven at 220°C

-With a cooking brush, paint the meat with the glacing and put in the oven at 200°C for 15'. As the glacing dries, add more layers with the brush.

-Remove the bay leaves, the cinnamon, the cloves, and the ginger from the vegetables. Bled the rest, add some stock if needed. Serve with the meat.
