Open sourcing my cheesecake
Mike's Cheesecake
Batter
4 (8oz) packages cream cheese
1/2 cup sour cream
1/2 cup sugar
6 egg yolks
2 teaspoons pure vanilla extract
2 teaspoons lime juice
Crust
1 package Graham crackers or Oreos
1/2 stick of butter
Instructions
Batter
1. Let all ingredients get to room temperature
2. Preheat oven to 300
3. Blend cream cheese in bowl, until smooth
4. Add sugar, blend until smooth
5. Remember to scrape sides and bottom of bowl as you blend, so that mix stays consistent
6. Add sour cream, blend until smooth
7. Add lime juice and vanilla, blend until smooth
8. Add egg yolks, blend until smooth
9. Remember to scrape sides and bottom of bowl as you blend, so that mix stays consistent

1. Use food processor to crush either graham crackers or Oreos
2. Melt butter
3. Mix in bowl
4. Form crust in cheesecake pan
5. Place in oven for 12 minutes
6. Cool in freezer for 10 minutes
Baking
1. Bake for 40 minutes
2. Take out to rest for 30 minutes
3. Finish baking for 35 minutes
Almost there!
1. Let it sit on counter for 1 hour
2. Place in fridge to cool for 4 hours
3. Place whatever toppings that you would like
4. Enjoy!
