I'm so allergic to MSG, I get an awful face rash that lasts a month and hurts. I just finished recovering from one. Did you know what put MSG in ranch?! Those bastards!
And I do fresh grated parmesan and butter, then add in pasta water! There are some recipes that use heavy cream too, but I guess it just depends on my mood how I do the sauce. The key is pasta water so it thickens it up.
