Non gift-wrapped are the first nostr DM standard. People can see to whom you are sending DMs, even though they can't read it unless they have the nsec.
Gift-wrapped is NIP-17 standard, you can't see to whom the DM is being sent unless you are the sender/recipient. Not every client has this NIP implemented, so you can't see those messages in all clients.
Don't know about the 3rd option.
