Thank you for everyone's help! I guess a router rebooted and the thermostat lost its 2.4 GHz connection. When I tried to reconfigure it, my iPhone was connected over 5 GHz (I have all my 2.4 GHz and 5 GHz networks named the same for roaming).
So even though it should pass the network name and password, I'm wondering if HomeKit passes the BSSID?! If so, that would explain it.
Solution was:
• guest 2.4 GHz unique name
• enable guest access to rest of network (for mDNS discovery for HomeKit)
